Let’s face it, we all pin so many things on pinterest, that frankly we will never make or do…..it’s like a never ending bucket list that could never be accomplished.  However, every once in a while I get lucky when looking for something to go with dinner and find something that I not only have all the ingredients to already on hand (yay no stopping at the store), but it’s delicious and healthy too.

Avocado, Tomato and Mozzarella Salad


1 ripe avocado, cubed

1-2 tomatoes, cubed

1 cup cubed mozzarella

1 tbsp. olive oil

1 tsp basil

salt and pepper to taste


Mix them all together and yummy!
