This is another pinterest find, and it was so good.  I did end up adding mushrooms to mine, mainly because I love mushrooms and I had some on hand that were going to probably go bad if I didn’t use them soon.

Italian Chicken



4-5 roma tomatoes

2 teaspoon garlic powder

Small jar of artichoke hearts, drained

2 tablespoons of extra virgin olive oil

1 teaspoon of sugar

2 tablespoons of flour

Salt and pepper to taste

1 cup sliced white mushrooms

2 pounds chicken (I used tenders)

1 cup shredded Italian cheese blend

Mix everything together but chicken and cheese.  Put chicken at bottom of baking dish and pour mixture over.


Sprinkle with cheese.


Bake at 350 degrees until chicken is cooked through.
