Chili Cilantro Lime Chicken Fail

Well the good news is that I survived one of the busiest weekends I’ve had in awhile. Starting last Thursday, I did some baking, make potato salad for my friends rehearsal dinner, attended said rehearsal and rehearsal dinner and packed all my supplies needed for the wedding the next day. Friday, was a co-maid of honor in my friends wedding with Jodi, Saturday finished cupcakes for my 10 year class reunion (yeah I’m THAT old), attended said reunion and had a great time with Jodi and other friends I haven’t seen in many years. On Sunday I got together with my family for a BBQ to welcome home my cousin from the Army…unfortunally its short lived…he flies out the end of this week and I won’t see him until December…but needless after it all…the best part is that…I survived.

Even with all the craziness I managed to have a pinterst fail. I knew it was bound to happen because I was way over due for one. I followed the recipe just as described…and Im not sure if it was the fact that I left it for a tad longer than needed in the crock pot…or that its just not a great recipe. I give Dan credit…when I served it to him…he smiled and said it just needed some BBQ sauce. I took one taste and told him how sweet he was to give me a huge white lie about how ok the recipe was. Chili Cilantro Lime Chicken

Bacon Ranch Chicken Pizza

It been a while since I’ve made homemade pizza, but after seeing this recipe on Pinterest last week I felt like it was definitely overdue. I modified it slightly due to what I had on hand, but the original recipe can be found over at Yummy Healthy Easy

Bacon Ranch Chicken Pizza

Ingredients

1 premade pizza dough or your favorite pizza dough recipe
1/2 cup ranch dressing
2 tbsp tomato paste
3 oz cream cheese
1 cup cooked and shredded chicken
3 green onions, chopped
1 1/2 cups Italian cheese blend
5 strips of bacon chopped

Instructions

Preheat oven to 400 degrees
Spray pizza pan or cookie sheet with non-stick cooking spray and press pizza dough into a circle with floured hands
Mix cream cheese, ranch dressing and tomato paste and spread on pizza dough.
Top with cheese, chicken, onions and bacon and cook for 12-15 minutes until crust is golden brown.

With the official start to the summer and 4th of July right around the corner, BBQ season is here! I was so in love with the potato salad I posted a week or so ago, I decided to try to make it into a pasta salad. I think I found my new favorite pasta salad…maybe a close second to tuna mac. The only complaint Dan had with my first go around was it needed more “dressing”. I’m not sure if he thought I took a bottle of Ranch and said voila…pasta salad…that’s a good sign of a great recipe…if it looks to easy to be true…most likely it is.

On another note, as you all read this post, Jodi and I are getting our hair did for our best friends wedding! Congrats to the soon to be Mr. and Mrs. I hope you all have a good weekend!

Chicken Bacon Ranch Pasta Salad

Ingredients
2 chicken breasts cooked and shredded
1 box of pasta cooked to box directions
half a package of bacon, cooked and crumbles (I used maple bacon)
1 package of ranch dressing (or make your own)
3/4 cup mayo
3/4 cup sour cream

Steps
1) Combine all ingredients into a bowl and mix!

2) Place in fridge for an hour or two before serving.

3) Voila…Chicken Bacon Ranch Pasta Salad

Naked Blueberry Wedding Cake

Tonight Jen and I will be attending the wedding rehearsal for our closest friend, who will be coming a Mrs. tomorrow. So, I figured today would be a great day to share with you the wedding cake we did last weekend. It was our first “naked cake” and it fit the wedding venue perfectly. We had to deliver this cake two and a half hours away, but it gave Jen and I the time to sit and write our dual maid of honor speech for tomorrow night.

Over this past weekend, Jodi and I make a wedding cake…(don’t worry pictures coming soon promise…). We played with a few recipes and ended up making a almond blueberry pound cake with lemon frosting and lemon glaze. When we were making the cake I couldn’t stop eating the scrap cake, especially covered in the lemony goodness….This gave me an idea for a new scone recipe.

Almond Blueberry Scones with Lemon Glaze

Ingredients
Scones
1 3/4 cups flour
3 TBS sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/3 cup firm butter
1 large egg beaten
1/4 tsp. vanilla
1/2 tsp. almond extract
1/2 cup whipping (heavy) cream
3/4 cup blueberries

Glaze
1 3/4 cups powdered sugar
1/4 cup lemon juice
zest from 1 lemon
1 tsp. butter
pinch of salt

Steps
Scones
1) In large bowl, mix flour, sugar, baking powder and salt. Cut in butter, using two knives (or you could do what I do…use your hands…but make sure you wash them first)until dough resembles fine crumbs.

2) Stir in extracts, egg, and whipping (heavy) cream. Add blueberries and combine.

3) Place dough on floured surface and gently roll in flour to coat. Knead 10 times.

4) Roll dough into a circle and cut into wedges using a pizza cutter.

5) Place wedges on greased cookie sheet and bake 20 mins at 350 degrees.

Glaze
1) Once scones are cooled, zest one lemon and put into a microwave safe bowl.

2) Add powdered sugar, lemon juice, butter and salt to bowl. Mix to combine.

3) Microwave for 45 seconds. Whisk together so there are no lumps.

4) Drizzle over scones…or eat with a soon…its THAT good.
